Passerina - spumante brut
Vineyard: Native in pureness. Vinification: Harvesting during the first week of September after thinning the grapes right after their darkening. Vinification in reduction with a brief soaking at low temperature, soft pressing and static must cleaning. Low temperature fermentation and subsequent base wine stabilization. Refining: Autoclave refermentation for about 30 days and a brief period of refinement when bottled, prior to market release. Alcohol content: 12% vol. Appearance: Pale and straw yellow color with soft and persistent perlage. Bouquet: Clear floral fragrance with pleasant citrus hints. Taste: Fresh and fruity. Serving glass: Flùte. Serving temperature: 5-8°C. Food matchings: Great with any meal, complementing well any type of appetizer, white meats, fish plates and Parmesan cheese.
